Description

Delight in these creamy and crunchy Biscoff Truffles, a perfect no-bake treat combining the rich flavor of Biscoff cookies with smooth cream cheese and white chocolate coating. Ideal for holiday celebrations or as a sweet snack, these bite-sized treats are easy to make and irresistibly delicious.

Ingredients

Scale

Truffle Mixture

  • 8.8 ounce package Biscoff cookies
  • 5 ounces cream cheese, softened
  • ½ teaspoon vanilla extract

Coating & Decoration

  • 12 ounces white chocolate melts or candy melts
  • Holiday sprinkles, optional
  • Reserved Biscoff cookie crumbs for decoration

Instructions

  1. Process Cookies: Blend the Biscoff cookies in a food processor until they become fine crumbs, stopping frequently to pulse and break any large chunks for an even texture.
  2. Combine Ingredients: Pour the cookie crumbs into a large bowl, reserving a couple of tablespoons for decoration. Stir in the softened cream cheese and vanilla extract thoroughly until the mixture is well combined and holds together.
  3. Form Truffle Balls: Scoop the mixture into approximately 1.5-inch balls and place them on a wax paper-lined plate for easy handling.
  4. Chill the Truffles: Refrigerate the formed truffle balls for about one hour to firm up the mixture before coating.
  5. Melt White Chocolate: Melt the white chocolate melts in a candy melter set to ‘warm’. Alternatively, melt gently in a microwave or double boiler, stirring frequently to avoid burning.
  6. Dip Truffles: Using a dipping fork, dip each chilled truffle ball into the melted white chocolate, ensuring an even coating. Remove carefully and place the coated truffles back onto waxed paper to set.
  7. Decorate: Immediately decorate each truffle with reserved cookie crumbs or holiday sprinkles before the chocolate hardens to ensure they stick well.

Notes

  • Storage Tips: These truffles keep well for up to two weeks in the refrigerator. For longer storage, freeze them for up to two months in an airtight container, layered with parchment or wax paper to prevent sticking. Defrost in the refrigerator before serving.
  • Expert Tips: Because the white chocolate hardens quickly, add decorations immediately after dipping. A candy melter is ideal to keep chocolate warm and easy to work with; without it, use a microwave or double boiler carefully. Warmed chocolate may unnecessarily harden upon contact with cold truffles, so maintain a steady chocolate temperature.
