Chocolate Mixture
- 1 bag Butterscotch Chips (about 10 ounces)
- 1 bag Semi-Sweet Chocolate Chips (about 10 ounces)
Other Ingredients
- 10 ounces Chow Mein Noodles
- Chocolate Eggs – Cadbury Mini Eggs, M&M Eggs, Robins Eggs, or Jelly Beans (about 54 eggs, 3 eggs per cookie for 18 cookies)
Instructions
- Combine and Melt Chocolate: In a large bowl, combine the butterscotch chips and semi-sweet chocolate chips. Melt the chips using either the microwave or the Instant Pot double boiler method until smooth, stirring frequently to ensure even melting.
- Coat Chow Mein Noodles: Stir the chow mein noodles into the melted chocolate mixture until they are fully coated. Make sure to lift the chocolate from the bottom of the bowl to cover all noodles evenly.
- Form Nests: Using large spoons, place spoonfuls of the coated noodle mixture onto a parchment-lined baking sheet or silicone liner.
- Shape the Nests: Shape each spoonful into a nest shape by creating a small indentation in the center to hold the eggs. Work quickly before the chocolate sets.
- Add Candy Eggs: Place three candy eggs into the center indentation of each nest-shaped cookie.
- Cool and Set: Allow the cookies to cool completely at room temperature so the chocolate hardens and holds the nest shape.
- Store Properly: Store the cooled cookies in a sealed container. They can be kept for up to one week but are best enjoyed within 2-4 days.
Notes
- To melt chocolate in the microwave: Mix chips in a glass bowl and microwave on high for 30 seconds, stir, then microwave for another 30 seconds. Stir and repeat 15-second intervals until fully melted.
- To melt chocolate using an Instant Pot: Add 2-3 cups of water to the pot and turn to Sauté. Place a larger glass bowl on top of the pot to create a double boiler. Stir as chocolate melts. Remove bowl carefully to avoid getting water into chocolate.
- Use parchment paper or silicone liners to prevent the nests from sticking to the baking sheet.
- Work quickly when shaping nests so the chocolate does not set before forming.
- Customize candy eggs as desired for seasonal or personal preferences.
