For the Filling:

  • 1 cup self-rising flour
  • 1 cup sugar
  • 1 cup milk
  • 2 teaspoons banana extract (optional)
  • ½ cup (1 stick) butter, melted
  • 4 ripe bananas, sliced

Instructions

  1. Preheat Oven: Preheat the oven to 375°F. Prepare a 2-quart or 9×9-inch baking dish by spraying it with nonstick cooking spray to prevent sticking.
  2. Make the Streusel Topping: In a bowl, combine the brown sugar, self-rising flour, and softened butter using a fork until the mixture turns crumbly. Stir in the oats and chopped pecans thoroughly. Set this mixture aside.
  3. Prepare the Banana Filling: In a medium bowl, whisk together the self-rising flour, sugar, and milk until just blended. Incorporate the melted butter into the mixture. For enhanced banana flavor, add the banana extract if using. Pour this filling evenly into the prepared baking dish.
  4. Layer Bananas: Arrange the sliced ripe bananas evenly over the filling layer in the baking dish.
  5. Add Streusel Topping: Evenly crumble the streusel mixture over the sliced bananas to fully cover the top.
  6. Bake the Cobbler: Place the dish in the preheated oven and bake for 45 to 50 minutes. Bake until the topping is golden brown and the custard filling is set and no longer jiggly.

  • This original recipe used a banana milk product that is no longer available, hence the updated use of regular milk. Using a banana protein drink can also yield great results.
