Ingredients
Scale
Base
- 1 stick butter (1/2 cup or 8 tablespoons), melted
- 3/4 cup white granulated sugar
- 1 cup self-rising flour
- 1 cup milk
- 3 bananas, peeled and sliced in rounds
- 1 cup shredded or flaked coconut
Topping
- 1 cup quick-cooking oats (can use regular oats)
- 1/2 stick butter (4 tablespoons), melted
- 1 teaspoon ground cinnamon
- 1/3 cup self-rising flour
- 1/4 cup brown sugar
- 1/2 cup chopped nuts (pecans recommended, or your choice)
Instructions
- Prepare Baking Dish: Spray a 9 x 9-inch baking dish with cooking spray. Melt the butter directly in the dish using the microwave, ensuring it’s completely melted.
- Mix Base Ingredients: To the melted butter, add the white sugar, self-rising flour, and milk. Stir the mixture well with a spoon until fully combined and smooth.
- Layer Bananas: Evenly layer the sliced banana rounds on top of the wet batter mixture in the baking dish.
- Add Coconut: Sprinkle shredded or flaked coconut evenly over the banana layer to add flavor and texture.
- Prepare Topping: In a separate bowl, combine the quick-cooking oats, melted butter, ground cinnamon, self-rising flour, brown sugar, and chopped nuts. Mix thoroughly with a spoon until crumbly and well combined.
- Apply Topping: Sprinkle the mixed topping evenly over the coconut and banana layers in the baking dish.
- Bake: Place the dish in a preheated oven at 350°F (175°C) and bake for 50 to 55 minutes, or until the topping is golden brown and the cobbler is bubbling around the edges.
- Serve: Remove from the oven and allow to cool slightly before serving. Serve warm for best flavor.
Notes
- Self-rising flour contains baking powder and salt; if unavailable, substitute with all-purpose flour plus baking powder and salt accordingly.
- You can use regular oats for the topping if quick-cooking oats are not available.
- Choose your favorite nuts for the topping; pecans add a rich, buttery flavor.
- For extra richness, serve with whipped cream or vanilla ice cream.
- Store leftovers covered in the refrigerator for up to 3 days.
