  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round pans.
  2. In a large mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with sour cream, beginning and ending with the dry ingredients.
  6. Stir in the vanilla extract and mashed bananas until just combined. Fold in nuts if using.
  7. Pour the batter into the prepared pan(s) and smooth the top.
  8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • For extra banana flavor, use overripe bananas with brown spots.
  • This cake pairs wonderfully with a cream cheese or brown butter frosting.
