Baked Cream Cheese Chicken Taquitos are crispy, golden tortillas filled with a creamy, cheesy chicken mixture. They’re a healthier alternative to fried taquitos, making them perfect for a quick dinner, appetizer, or snack.

- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 4 oz (115g) cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup salsa (your choice of mild or spicy)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 10 small flour or corn tortillas
- Cooking spray or a light brush of olive oil
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, mix cream cheese, cheddar, Monterey Jack, salsa, garlic powder, cumin, salt, and pepper until well combined.
- Fold in the shredded chicken until evenly coated with the mixture.
- Warm tortillas slightly to make them pliable (wrap in a damp paper towel and microwave for 20–30 seconds).
- Place 2–3 tablespoons of the chicken mixture along one side of each tortilla and roll tightly.
- Place rolled taquitos seam-side down on the baking sheet. Lightly spray or brush with oil.
- Bake for 15–20 minutes, or until crispy and golden brown.
- Serve hot with sour cream, guacamole, or salsa for dipping.
Notes
- These can be frozen before baking; bake from frozen for about 25 minutes.
- Swap cream cheese for Greek yogurt for a lighter option.
- Great for using up leftover chicken or turkey.
