Ingredients
Scale
Fritter Bites
- Nonstick cooking spray
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced Honeycrisp or Gala apples (about 2 medium)
Apple Cider Glaze
- 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or juice
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Grease a baking sheet with nonstick cooking spray to prevent sticking during baking.
- Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon until well combined to evenly distribute the leavening and spice.
- Mix Wet Ingredients: In a large bowl, whisk the melted unsalted butter and granulated sugar until combined and slightly creamy. Add the egg, vanilla extract, and unsweetened applesauce, whisking until the mixture is smooth and homogenous.
- Combine Batter: Slowly add the dry flour mixture to the wet ingredients, stirring gently just until combined to avoid overmixing. Then gently fold in the finely diced apples, ensuring they are distributed evenly throughout the batter.
- Portion Batter: Using a tablespoon, scoop out 1 tablespoon portions of the batter and drop them onto the prepared baking sheet, spacing each a few inches apart to allow for spreading.
- Bake: Place the baking sheet in the preheated oven and bake the fritter bites for 10 minutes until they are puffed and lightly golden.
- Prepare Glaze: While the fritters bake, whisk together the powdered sugar and apple cider (or juice) in a bowl until the glaze is smooth and pourable.
- Apply Glaze and Broil: Remove the fritters from the oven and turn the oven broiler to high. Brush some of the glaze over the warm fritter bites, allowing it to drip down the sides. Return the pan to the oven and broil for 2-4 minutes, rotating the pan frequently, until the glaze starts to caramelize and bubbles.
- Final Glaze: Remove the fritters from the broiler and brush the remaining glaze evenly over the tops to give a glossy finish and extra sweetness.
- Set and Serve: Let the glazed fritter bites sit for 15 minutes at room temperature to allow the glaze to set properly before serving.
Notes
- Use firm apples like Honeycrisp or Gala for best texture and sweetness.
- Don’t overmix the batter to keep the fritter bites tender.
- Watch closely while broiling the glaze as it can burn quickly.
- These bite-sized fritters are perfect for sharing at parties or as a fun breakfast treat.
