- 1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 cup orange marmalade
- 1/2 cup BBQ sauce
- 2 tablespoons soy sauce
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Place chicken pieces in a single layer in the dish. Bake for 20–25 minutes, or until fully cooked and slightly golden.
- In a small saucepan over medium heat, combine orange marmalade, BBQ sauce, and soy sauce. Stir and cook until warmed through and slightly thickened (about 5 minutes).
- Remove chicken from oven, toss with the sauce until well coated, and return to the oven for another 5 minutes to caramelize slightly.
- Serve hot over rice or with steamed vegetables.
Notes
- Use store-bought popcorn chicken or chicken nuggets for an even quicker version.
- Add chili flakes for a spicy kick.
- This recipe can also be made in a skillet on the stovetop.
- Pairs well with jasmine or white rice.
